just wondering if anyone knows if it's safe to eat the livers ,hearts and gizzards from canada geese? i'm planning on making liver sausage out of the livers,and pickling the hearts and gizzards.  i saved the inards on 30 geese we shot in mich.  on monday.   encore

Congrats on taking those geese!
 
From what I've read, it's perfectly safe to eat the livers, the hearts and the gizzards of geese as long as you prevent them from spoiling before eating.  By properly handling and storing them before hand you should be able to make sausage out of the livers and you should also be able to pickle the hearts and gizzards without concern.

well i pickled the hearts yesterday,they have to sit about a week,i'm doing the liver sausage as we speak,gizzards tomorrow,and smoked goose breasts and chunks the next.

the goose liver sausage turned out great, pickled gizzards  taste good,as does the smoked goose chunks,the pickled goose hearts  are kinda chewy and taste a little bit like liver,next time i'll just fry them up and eat them.---encore

Well I don't know about all that, never had hearts or livers that I liked.  Now gizzard that is a totally different story.
