My Bride has always had a way with makin' wild game taste better than I expect it to ... she does goose/duck (and some upland) in stir-fry, or over noodles ... several ways ... (do NOT ask for recipes ... she does it all by natural talent ... )

A long time ago, I decided to try smokin' goose/duck breasts ... first batch wuz done, and when the kids tried 'em, the large coffee can in which I'd brung 'em to the house wuz EMPTY in less than a half-hour ... same thing happened when I took a batch of 'em along on my BIL's bighorn sheep hunt ... the poker game needed some munchies, so I opened up the package and they din't last long ...

Merely offerin' some alternative ideas ...

I give most of my waterfowl away.....there is always some one asking for it.
I'm spoiled with beef & deer steak I guess.
I just got a smoker & was using it the other day for first time.I'd be interested in hearing about how you make waterfowl jerky?
